Granola is super easy to make and so much healthier than the store-bought stuff containing loads of sugar and unhealthy fats. This version makes your house smell like apple pie, because of the spices! The mix we used is called ‘speculaaskruiden’ in Dutch and contains cinnamon, nutmeg, cloves, ginger, cardamom and white pepper. It is very similar to British ‘mixed spice’. ‘Speculaaskruiden’ are originally used in traditional dutch cookies like ‘speculaasjes’ and ‘pepernoten’. You could also use pumpkin spice or a gingerbread spice mix! As a base for our granola we used oats and added nuts, buckwheat pops, shredded coconut and dried apricots. A great breakfast to start your day with! Keep your granola in a preserving jar to keep it crunchy.
- 450 gr. rolled oats
- 3 cups buckwheat puffs (or rice puffs)
- 150 gr. dried apricots
- 100 gr. coconut shreds
- 175 gr. mixed nuts (unsalted)
- 5 tbs coconut oil
- 5 tbs agave syrup
- 1 tsp salt
- 1 tbs cinnamon
- 2 tsp mixed spice
- 1 tsp cardamom
Step 3: Combine the oats and chopped nuts and stir in the spice mixture.
Optional: Transfer to a pretty preserving jar and add a label! The granola keeps for about two weeks.
